Crispy Lemon Cookies

Pre-heat your oven to 400F.

In a mixing bowl, cream the butter and sugar. Beat in the egg, milk, juice, zest, and extract.

Combine the flour, salt, and baking soda; gradually add to creamed mixture.

Shape into 1" balls or drop by rounded tsp. 2" apart onto dark non-stick baking sheets, and flatten with a glass dipped in sugar.

Bake at 400°F for 7–9 minutes or until edges are lightly browned.

Cool for 2 minutes on the baking sheet, then remove to wire racks to cool.
