Whisk the mayonnaise with the harissa in a small bowl, and set it aside.

Heat a grill pan or heavy bottom cast iron frying pan.

In a large bowl, mix the lamb with the coriander, cumin, paprika and 0.5 tsp. each of salt and pepper. Divide the mixture into six little balls and flatten them with your hand.

Grill the patties over high heat, turning once, until lightly charred outside and medium on the inside. This should take about 2 minutes per side.

Set the patties on the buns, top them with the harissa mayonnaise, onion, and cucumber slices, and serve.
