Wash the rice until the water is no longer cloudy.

Combine all the ingredients in a bowl, mix them well, and refrigerate for at least a half an hour.

Form the mixture into 1.5" balls, arrange them in oiled Chinese steamer baskets, and place over boiling water in a wok.

Put the lid on the top basket and steam them for 25 minutes, by which time the rice should be tender.

Serve with dipping sauces: hot mustard, soy sauce with minced garlic and ginger, Hoisin sauce, plum sauce, rice vinegar with chili oil, etc.
