If you order any sort of seafood louis in a restaurant and they ask you what kind of dressing you want, tell them you've changed your mind and order something else. Maybe there is good food on the menu, but this won't be it.
To have a good seafood louis at home you want to make a dressing like this.
Mix all the ingredients together and taste it; if you think it needs it, feel free to add a little Tabasco or grated horseradish. Chill it for a half hour or so.
Make a salad based on some good lettuce topped with the shrimp or crab, or maybe lobster, and pour the dressing over.
Other ingredients should include slices of cold hard-boiled egg, cucumber, good tomatoes, ripe avocado, lightly steamed peas, beans, or asparagus, capers, and maybe some pickled beetroot.
