Crab in the Air-Fryer

You can season this any way you like. Give it an oriental flavour with sesame oil, fish sauce, oyster sauce, garlic, and ginger, or a Mediterranean accent with olive oil, lemon juice, garlic, pepper, and parsley.

To prepare a live crab for dismemberment, hold the crab from behind, between its two back legs so it can't reach you with its claws. Place it on its back, insert the point of a long knife or cleaver about an inch behind the eyes, and chop downward swiftly, cutting through the middle of the brain, killing it instantly. It'll probably hiss and grab your knife, but you just destroyed its brain, so it's not feeling anything any more.

Pull off the apron, and remove the body from the shell. Discard the gills and intestines.

Cut the body in half, then rinse it off and cut each half into 5 segments, each with a leg or claw attached.

Whisk together your chosen seasonings in a large bowl, add the crab pieces, and turn them so that they're coated.

Pre-heat your air-fryer to 375°F then put the crab parts in and cook them for 8 minutes, shaking everything up half-way through. Take care not to over-cook, or the crab will be dry. If your crab weighs less than 2 lbs., you may need to cut a minute off the cooking time.

Serve with a green salad, bread, and a nice sauvignon blanc or steam beer.
