Roast Beetroot

• 6 medium beets, cleaned with 1-inch stem remaining
• 2 large shallots, peeled
• 2 sprigs rosemary
• 2 tsp. olive oil

Pre-heat your oven to 400F.

Toss all of the ingredients together in a large bowl.

Make a pouch out of foil, seal all the ingredients in the pouch, and roast it in the oven for 40 minutes.
