Oven-Baked Fries

Pre-heat your oven to 500F.

Peel your potatoes or not, as you please, then cut them into whatever size of chips/fries you prefer. Everything except the potatoes, salt, and oil is optional.

Bring 2–3 cups of water to the boil in the bottom of a steamer pot. Drop in the steamer rack and put the chips/fries on it and cover the pot. Steam them until they are just done but still firm—you don't want them to fall apart.

Stir the salt and oil, along with anything else you fancy, in a bowl and toss in the potatoes, mixing it up so everything is well coated.

Discard any excess liquid and arrange the potatoes in a single layer on a baking sheet and bake them for 15–20 minutes, turning them every few minutes so they brown all over.

Depending on how thick you sliced them, they should be cooked through and crisp on the outside, but they could need another 5 minutes. Serve immediately.
