Pre-heat your oven to 400F.
Place the potatoes in a large pot of cold water with 2 tsp. salt. Bring this to the boil and remove the chips after no more than 1 minute, draining them into a seive or colander immediately.
Stir everything else together in a bowl and toss in the potatoes; stir it so the potatoes are all coated.
Arrange the potatoes in a single layer on the baking sheet and bake them for 30–35 minutes, turning every 10 minutes so they brown all over.
Depending on how thick you sliced them, they should be cooked through and crisp on the outside, but they could need another 5 minutes. Serve immediately.
