Boil the potato cubes for a 10 minutes until almost cooked.
Heat oil or ghee in a saucepan over medium heat and fry the onion until it is slightly browned, then add the garlic and spices and cook for another minute or two.
Add the spinach and drained potato cubes and turn down the heat. Add salt and lemon juice, cover the pan and simmer for about 15 minutes until done.
This goes well with one of the Middle Eastern or South Asian chicken or lamb dishes, such as Tandoori Chicken, or Lamb Shawarma.
