Crispy Lemon Cookies

Pre-heat your oven to 400°F.

In a mixing bowl, cream the butter and sugar. Beat in the egg, milk, juice, zest, and vanilla.

Combine the flour, salt, and baking soda; gradually add these to the creamed mixture.

Use a teaspoon to form the dough into 1" balls and drop them 2" apart onto dark non-stick baking sheets; flatten them with a glass dipped in sugar.

Bake at 400°F for 7–9 minutes or until the edges are lightly browned.

Cool for 2 minutes on the baking sheet, then remove them to wire racks to finish cooling.
