Basic Pancakes

In a large bowl, sift together the flour, baking powder, salt, and sugar. Make a well in the center and pour in the milk, egg, and melted butter; mix quickly until it's fairly smooth, but don't worry about a few lumps.

If you can make the batter ahead of time and let it rest in the fridge for an hour or two before you use it, so much the better.

Heat a lightly oiled griddle or heavy frying pan over medium high heat; it's ready when a few drops of water bounce. Ladle the batter onto the griddle, using approximately 0.25 cup for each pancake.

They should take a minute or two to brown on each side.

Serve hot with butter, syrup, lemon juice and sugar, or whatever else you like.
