Preheat and lightly butter a large skillet or griddle.
Mix the flour, salt, and baking soda together in a bowl. Add the egg, buttermilk, and butter; stir together, but lightly, keeping it lumpy. The batter should be quite thick.
Drop quarter-cup ladles of the batter onto the cooking surface, spreading it lightly with the bottom of the ladle. Cook them until they're lightly-browned, 1–2 minutes per side.
