Position a rack on the lowest rung of your oven and pre-heat your oven to 425°F.

Butter a 12-cup standard muffin pan and place it on a baking sheet.

Place all the ingredients in a bowl and whisk until smooth (or you could just use your blender). Divide the batter evenly between the 12 muffin cups.

Bake for 20 minutes, until the popovers are browned and puffy. Reduce the oven temperature to 350°F and bake for about 15 minutes longer, until golden brown and crisp.

Remove the popovers from the muffin pan and place them on a wire rack to rest for a few moments.

Serve right away with jam (or bacon, if you're going the savory route).
