Please ensure all your ingredients are at room temperature before starting, or the mayonnaise won't emulsify.
Beat the egg and the yolks together in a bowl.
Chop the chives, mince the garlic, and stir into the eggs, along with the lemon zest.
Whisk in the lemon juice and the vinegar, then begin very slowly to add the oil, whisking constantly, until the mix reaches the consistency of mayonnaise.
Adjust the seasoning to taste.
