Mustard

You can mix all sorts of things with a basic mustard powder (and try grinding your own mustard seed too) to get all kinds of wonderful effects.

• Vinegars of all sorts, wine, cider, malt, plain distilled
• Heat enhancers such as red or black pepper, ginger, horseradish, chili oil
• Sweeteners, such as honey or dark brown sugar
• Alcohol, such as beer, wine, tequila, or whisky

For example, you can create a complex mustard using a blend of several ingredients:

• Mustard powder
• Distilled vinegar (try rice vinegar instead)
• Sugar
• Salt
• Wondra
• Vegetable oil
• Garlic
• Turmeric
• Ginger
• Lemon juice

Or a simple Chinese-style hot mustard thus:

• Mustard powder
• Ground white pepper
• Water
