You can mix all sorts of things with a basic mustard powder (and try grinding your own mustard seed too) to get all kinds of wonderful effects.
- Vinegars of all sorts, wine, cider, malt, plain distilled
- Heat enhancers such as red, white, or black pepper, ginger, horseradish, chili oil
- Sweeteners, such as honey or dark brown sugar
- Alcohol, such as beer, wine, tequila, or whisky (but not gin)
- Enough water to give you the texture you want
For example, you can create a complex mustard using a blend of several ingredients:
- Mustard powder
- Distilled vinegar (try different vinegars)
- Sugar
- Salt
- Wondra
- Vegetable oil
- Garlic
- Turmeric
- Ginger
- Lemon juice
Or a simple Chinese-style hot mustard thus:
- Mustard powder
- Ground white pepper
- Water
A recent recipe that goes well with corned beef:
- 1 Tbsp. mustard powder
- 1 tsp. balsamic vinegar
- 0.5 tsp. horseradish sauce
- 0.5 tsp. Calabrian peppers
- Water
