Sauce Louis

Back to the Sauces Index

If you order shrimp louis in a restaurant and they ask you what kind of dressing you want, tell them you've changed your mind. Maybe there is good food on the menu, but this won't be it.

To have it at home you want to make a dressing like this.

Mix all the ingredients together and taste it; if you think it needs it, feel free to add a little Tabasco or grated horseradish. Chill it for a half hour or so.

Make a salad based on some good lettuce topped with the shrimp (or crab) and pour the dressing over.

Other ingredients should include slices of cold hard-boiled egg, along with good tomatoes (i.e., ones with flavor and texture), slices of ripe avocado, capers, or pickled beetrootd.
