Pre-heat your oven to 350F and grease a baking dish with a little butter.
Dust the fillets with seasoned flour and roll them up head to tail.
Arrange the fillets in the baking dish and top them with the mushrooms and shallot, then sprinkle them with a little salt and the lemon juice and sherry. Pour the cream over it all.
Cover with a lid or foil and bake at 350F for 20 minutes.
