Cauliflower Mash |

Pre-heat your oven to 375F.
I like to use Gruyère for this; you may prefer a nice, sharp Cheddar or something else.
Cut the potato and cauliflower into chunks. Put the potatoes on to simmer. After they've been going for about 5 minutes, add the cauliflower and simmer 10 minutes more.
Mash the cauliflower, potatoes, butter, and cream together with a bit of salt and pepper, and place the mixture in a soufflé dish or other casserole, top with the grated cheese, and bake at 375°F until the cheese is melted and golden on top.
