Pre-heat your oven to 500F.
Stir the salt and oil, along with anything else you fancy, in a large bowl and set it aside.
Peel your potatoes or not, as you please, then cut them into whatever size of chips/fries you prefer. Everything except the potatoes, salt, and oil is optional.
Fill a pot with cold water, salt it liberally, and drop in the chips/fries. Turn on the heat and bring the water up to a boil, then turn down the heat and let your chips simmer for no more than 60–90 seconds, depending on their thickness; you don't want them to fall apart. Immediately remove the potatoes from the hot water.
Toss the potatoes into the bowl with the oil, mixing it up so everything is well coated.
Using a slotted spoon or spatula, arrange the potatoes in a single layer on a baking sheet and bake them in your pre-heated oven for 15–20 minutes, turning them every few minutes so they brown all over.
Depending on how thick you sliced them, they should be cooked through and crisp on the outside, but they could need another 5 minutes. Serve immediately.
