Salad:
- 1 lb. grape tomatoes, halved
- 1 cup black olives, sliced
- 0.5 cup green olives, sliced
- 0.5 cup sliced pepperoncinis
- 1 cup chopped marinated artichokes
- 4 oz. thin sliced salami, quartered
- 1 cup cheese, cubed or crumbled
Dressing:
- 0.25 cup olive oil
- 1 Tbsp. red wine vinegar
- 1 Tbsp. dried Italian seasoning
- 1 garlic clove, minced
- 1 handful fresh parsley, chopped
- Salt & pepper, to taste
Prepare and combine all the salad ingredients in a large bowl.
Whisk the dressing ingredients together and pour them over the salad. Toss it all until it's evenly coated.
Salt and pepper to taste.
