Mix the vinegar, mustard, salt, and pepper together, then add the oil and whisk to blend.
If you have a mandoline, use that to slice the cucumber as thinly as you can, otherwise, do your best.
Line each diner's salad bowl with cucumber slices, then add thin slices of mozzarella and top with decoratively cut sections or slices of tomato.
Drizzle with dressing and adorn with torn basil leaves.
This is enough for two. Multiply as needed.
