The naming of this dish all depends on how you or your guests feel about parsnips. If you can sell it as raw parsnip salad, by all means do so. It's really good, and I've served it to vegetarians and non-vegetarians with success. If you cut the bell pepper thinly enough, it does look a bit like a crab salad.
Combine parsnip, celery, onion, red pepper, and olives, and season with salt and pepper.
Fold in enough mayonnaise to bind the salad together.
Chill well and arrange in a serving bowl on lettuce leaves.
