Lemon-Mustard Skirt Steak

Trim as much of the fat from the steak as you can and cut it into serving-sized pieces.

Stir the mustard and lemon juice together in a bowl and add a little salt and pepper. Place the pieces of steak in the bowl and massage them with the marinade. If you're doing this an hour before you're going to cook, just leave the bowl, covered, somewhere pet-safe. If you're doing this in advance, as you should, place the covered bowl in the fridge for 24 hours.

Hear your grill, or pre-heat a ribbed cast iron skillet for 10 minutes over high heat. Cook the pieces of steak for 3 minutes on one side, and 2 minutes on the other for nice, rare steaks.

This can be rather good topped with a little blue cheese dressing and a salad on the side.
