For easy-to-peel hard-cooked eggs, don't boil them. Boil some water in the bottom half of a steamer, then put the eggs in the steamer basket and put on the lid. Where you would simmer the eggs for 8 minutes, you want to steam them for 12.
Lift the eggs out of the steamer with a pair of tongs or a big spoon and drop them into a bowl of ice water. Be sure to use more ice cubes than eggs.
After 2 minutes or so you should be able to crack and peel the eggs cleanly.
OR you can cook them in an air-fryer.

Again, when you take them out of the air-fryer (with a nice pair of silicone tongs), dunk them in a bowl of ice water for a couple of minutes, then you can peel them without scalding your fingers.
